Bananas Foster

Ingredients

  • 1 tsp sesame seeds (a mix of black and white is great)
  • 20g unsalted butter
  • 2 tsp dark brown soft sugar
  • 1 banana, halved lengthways, then in half again (to make 4 pieces)
  • 2 tbsp dark rum
  • Ottolenghi Madagascan Vanilla & Miso Caramel Ice Cream (optional)

Method

  1. In a medium frying pan (ideally stainless steel), toast the sesame seeds until they smell nutty and the white seeds turn golden. Set aside in a small bowl. In the same pan, add the butter and sugar over a medium-high heat. Once starting to melt together, stir to combine for 1-2 minutes. Place the banana on top, cut-side down. Cook for 2 minutes, swirling gently to ensure the bananas don’t stick, and until the mix resembles caramel.

  2. Add the rum off the heat. Carefully tilt the bananas and caramel to one side, then carefully light the rum from your gas flame or use a long match. Cook for 1-2 minutes more, until the flames die down and the caramel thickens. If you don’t fancy flambéing, reduce the rum down with the bananas until thick and saucy. Serve the bananas cut-side up on a sharing plate, finished with the toasted sesame seeds. Delicious with ice cream, if you fancy it.

Cook’s tip

This is made to be played around with. Light or dark rum works here, as does brandy or whisky. Try chopped toasted nuts on top if you don’t have sesame seeds and serve with your favourite ice cream.
