Ingredients

  • 380g pack Mediterranean vegetables with borlotti beans & feta
  • 270g pack cherry vine tomatoes
  • 130g pack garlic & chilli king prawns
  • 90g pack wild rocket

Method

  1. Preheat the oven to 200ºC, gas mark 6. Add the Mediterranean vegetables (reserving the feta) and cherry tomatoes, picked from the vines, to a medium roasting tin. Add a drizzle of oil, if liked, toss everything together, then cover with foil and bake for 25 minutes.

  2. A few minutes before the end of cooking, spoon in the king prawns, leaving most of the garlic and chilli marinade in the pack, and scatter over the reserved feta. Return to the oven, uncovered, until piping hot throughout.

  3. Remove from the oven, add half the rocket and toss through. Serve drizzled with the reserved marinade and the remaining rocket on the side.
