Ingredients

  • 2 tbsp sunflower oil
  • 1 tsp cumin seeds
  • 1 green chilli, finely chopped
  • 1 onion, thinly sliced
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 600g leftover Christmas vegetables, cut into 2-3cm pieces
  • 600g cooked basmati rice (from 150g uncooked rice)
  • ¾ x 25g pack coriander, chopped

Method

  1. Heat the oil in a frying pan and add the cumin seeds and green chilli. Cook for a few seconds, then add the onion and cook for 5 minutes more until softened.

  2. Add the salt, spices and leftover vegetables and cook over a high heat for 2 minutes

  3. Add the rice and mix through until piping hot, adding a splash of water if needed. Add the coriander, fold it through and serve.
