Ingredients
2 tbsp sunflower oil
1 tsp cumin seeds
1 green chilli, finely chopped
1 onion, thinly sliced
1 tsp salt
1 tsp garam masala
1 tsp ground turmeric
1 tsp ground cumin
600g leftover Christmas vegetables, cut into 2-3cm pieces
Heat the oil in a frying pan and add the cumin
seeds and green chilli. Cook for a few seconds,
then add the onion and cook for 5 minutes
more until softened.
Add the salt, spices and leftover vegetables
and cook over a high heat for 2 minutes
Add the rice and mix through until piping
hot, adding a splash of water if needed. Add
the coriander, fold it through and serve.
