Preheat the oven to 200ºC, gas mark 6. Bake the focaccia according to pack instructions.
Drain the burrata and place it in a bowl, then gently mix it until loose and broken into pieces.
Spread each focaccia base with 2 tbsp pesto, followed by the mortadella slices, then the burrata. Season, finish with the rocket, sandwich with the focaccia tops and serve.
