Ingredients

  • 100g unsalted butter, softened
  • 100g Billington's Golden Caster Sugar
  • 100g ground almonds
  • ¼ tsp almond extract (optional)
  • 2 tbsp plain flour
  • ¼ tsp fine salt
  • 1 medium free range egg
  • 400g sliced all butter brioche loaf
  • 12 tbsp morello cherry preserve
  • 50g toasted flaked almonds

Method

  1. Preheat the oven to 200ºC/180ºC fan/gas 6. In a medium bowl, cream the butter and sugar with an electric hand mixer for 2 minutes until light and fl uffy. Beat in the ground almonds, almond extract (if using), flour and salt until combined. Finally beat in the egg and set aside.

  2. Arrange 12 slices of brioche fl at over two large foil-lined baking trays. Spread a small tablespoon of cherry preserve on each, then spread the frangipane evenly over the tops with a butter or palette knife. Scatter with the flaked almonds.

  3. Bake for 12-15 minutes until golden all over. Cool for 5 minutes, then serve dusted with icing sugar and with a scoop of vanilla ice cream, if you like.

Cook’s tip

Ahead of the game
Make the frangipane up to 48 hours in advance and chill, then bring to room temperature before using. The baked puddings freeze well, too.

And to drink...

Twinings Superblends Camomile & Vanilla Tea
Soft vanilla and floral camomile notes pair wonderfully with the sweet cherries and buttery brioche – the perfect excuse to put the kettle on.
