Ingredients

  • 1 pack British roast chicken breast fillets
  • 1 Perfectly ripe avocado
  • 1 bag Caesar salad
  • 1 can anchovy fillets in extra virgin olive oil

Method

  1. Heat the chicken according to pack instructions, if you prefer it hot. Slice the chicken, hot or cold, thickly against the grain of the meat.

  2. Halve, then slice or dice the avocado. Tumble the lettuce from the Caesar salad with ½ the dressing, then divide between 2 plates and top with the chicken and avocado.

  3. Add a few anchovies from the can, draped whole or roughly chopped. Drizzle over a little olive oil from the can, if liked.

  4. Drizzle with the remaining dressing, top with the croutons and parmesan from the Caesar pack and serve.
