Chipotle & avocado plant-based burgers
You won't miss the meat in these juicy vegan burgers, especially with the zingy chitpole and lime mayo. The plant-based patties are stuffed into sesame buns with sliced avocado and quick-pickled onions. They're gloriously messy but well worth it. Ingredients
- 1 tbsp white wine vinegar
- 2 tsp maple syrup
- ¼ tsp salt
- ¼ red onion, finely sliced
- 2 Beyond Burgers
- 3 tbsp plant-based mayonnaise
- 1 tsp chipotle paste
- 1 unwaxed lime, zest and juice
- 2 white sesame seed burger buns
- ½ avocado, sliced
Method
Mix the vinegar, maple syrup and salt in a small bowl. Add the red onion and set aside to pickle (this can be prepared up to a day in advance; cover and chill until ready to use).
When ready to cook, either fry, air fry or barbecue the burgers as per pack instructions. Meanwhile, in a small bowl, mix the mayo, chipotle paste, lime zest and juice with a pinch of salt.
Split open and toast the buns. Spread the bun bases with the chipotle and lime mayo, then add the sliced avocado. Top with a burger patty and some drained pickled onions. Finish with a bun lid, then serve with sweet potato fries, if liked.
