Put the ingredients for the winter syrup in a pan with 100ml water and heat gently until dissolved, stirring occasionally; allow to cool.
Put 15ml winter syrup, the bitters and ½ the whisky in a rocks glass or tumbler and begin stirring with 2 ice cubes. After a minute or so add the rest of the whisky, another 2 ice cubes, and continue stirring. Serve with a generous twist of orange peel squeezed over the drink and added to the glass, if liked.
Chill the rest for up to 3 days to use in other cocktails or for pouring over vanilla ice cream.
