Curried lentil & sweet potato pies
This vegetarian dish tops curried lentils with mashed sweet potatoes and carrots for a simple midweek meal.

- 1 sweet potato, approx 250g, diced
- 1 carrot, diced
- 600g frozen vegetable curried dhal
Preheat the oven to 200°C, gas mark 6. Cook the sweet potato and carrot in boiling water for 15 minutes until tender, then drain and mash. Season well.
Meanwhile, fry the vegetable dhal for 7-8 minutes and divide between 2 individual serving dishes. Top with the mash and bake for 15 minutes.
