    Ingredients

    • 4 No.1 Red Choice Tomatoes, halved
    • 1 tbsp olive oil
    • 1 tbsp balsamic vinegar
    • 3 thyme sprigs
    • 8 rashers Cooks' Ingredients Italian sliced pancetta
    • 5 stems cavolo nero (about 90g)
    • 4 eggs
    • 2 English muffins (or 2 slices of sourdough), halved and toasted

    For the hollandaise

    • 125g unsalted butter
    • 2 egg yolks
    • 1 tbsp lemon juice
    • ¼ tsp fine salt
