Fig & basil pasta salad

Ingredients

  • 250g wholewheat penne
  • 270g pack cherry vine tomatoes, halved
  • 300g Figs, each cut into 6 small wedges
  • 2 small echalion shallots, finely sliced into rings
  • ½ x 25g pack basil, leaves torn
  • 1 tsp sea salt flakes
  • 1 tsp demerara sugar
  • 3 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil

Method

  1. Cook the pasta according to pack instructions, drain and briefly rinse with cold water to stop it cooking.

  2. Meanwhile, in a bowl, combine the tomatoes, figs, shallots, basil, salt, sugar and some black pepper; mix well. Add the red wine vinegar and set aside. Add the cooked pasta to the bowl and mix well, then toss through the olive oil and serve.

Cook’s tip

Crumble a creamy cheese such as ricotta or feta on top, if liked.
