Ingredients

  • 1 echalion shallot, finely sliced
  • 1 green chilli, finely sliced
  • 2 tbsp rice vinegar
  • 1 tsp caster sugar
  • 3 tbsp groundnut or vegetable oil
  • 300g pack mango, coconut & lime chicken breast strips 
  • 200g pack trimmed fine green beans
  • 4 clove/s garlic, finely chopped
  • 25g ginger, peeled and cut into matchsticks
  • 2 x 250g pouches coconut basmati rice
  • ¼ tsp ground white pepper
  • 2 tbsp soy sauce
  • 25g pack coriander, leaves roughly chopped

Method

  1. In a bowl, toss the shallot and chilli with the vinegar, sugar and a pinch of salt, then set aside. Heat 1 tbsp oil in a wok or large frying pan, cook the chicken according to pack instructions, then set aside on a plate and leave to rest.

  2. Add the remaining oil and green beans, then fry for 3 minutes. Stir in the garlic and ginger and fry for 1 minute more until fragrant. Add the rice with the pepper and soy sauce. Stir fry for 5 minutes, adding a splash of water if needed, until everything is lightly crisp and piping hot.

  3. Slice the chicken pieces, toss into the rice with half the chopped coriander, then serve, scattered with the remaining chopped coriander, the pickled shallots and chillies.
