    PATE SUCREE (SWEET PASTRY)

    • 250g plain flour, plus extra for dusting
    • ½ tsp fine salt
    • 100g golden caster sugar
    • 3 eggs (1 whole and 2 separated)

    CREME PATISSIERE

    • 4 egg yolks
    • 90g golden caster sugar
    • tbsp plain flour
    • 300ml whole milk
    • 1 vanilla pod, seeds scraped out (or 2 tsp vanilla bean paste)
    • 170ml double cream, chilled
