Green goddess potato & chicken salad

Ingredients

  • 4 skin-on, bone-in chicken thighs
  • 300g new potatoes, halved
  • 225g pack No.1 Green Vegetable Medley
  • 2 tbsp All Dressed Up Miso Sesame Dressing
  • 1 unwaxed lemon, zest and juice
  • ¼ x 20g pack chives, roughly chopped

Method

  1. Preheat the oven to 200ºC, gas mark 6. Season the chicken all over with salt and arrange skin-side down in a large ovenproof frying pan. Set over a medium-high heat and cook for 8-10 minutes, until the skin is deep golden and crisp. Turn the chicken over and transfer the pan to the oven; roast for 20-25 minutes until cooked through, the juices run clear and no pink meat remains.

  2. Meanwhile, bring a large pan of salted water to the boil. Cook the potatoes for 12-15 minutes until tender; drain and leave to steam dry. Cook the veg according to pack instructions. Tip half of the greens into a blender with 1 tbsp of the dressing, the lemon juice and most of the chives; whizz until almost smooth.

  3. Tip the potatoes back into the pan along with the remaining greens. Stir in the green sauce, then divide between plates and top with the chicken. Pour the chicken juices into a bowl, whisk in the remaining 1 tbsp dressing and drizzle over the chicken. Scatter with the remaining chives and the lemon zest.
