Ingredients
- 200g popcorn maize
- 1 tbsp Essential Vegetable Oil
- 200g granulated sugar
- 2 tbsp butter, plus extra for greasing
- Generous pinch Maldon Sea Salt Flakes
- 1 tsp About 1 tsp red food colouring gel, as needed
- ½ tsp vanilla bean paste
- ½ x 25g pack Cake Decor Edible Eyes
- Red sweets, to serve (I used 10 red Smarties, 6 red Sour Patch Kids and 65g pack Teeth and Lips)
Method
Put the popcorn kernels and oil into a large saucepan, cover with a lid and shake well to coat the kernels. Place over a high heat, with the lid on, and cook until you hear popping. Shake the pan frequently and reduce the heat to medium. Cook for 4-6 minutes more, or until the popping stops. Remove from the heat.
Meanwhile, preheat the oven to 150ºC, gas mark 2, and line a large baking sheet with baking parchment. Place the sugar, butter, salt and 2 tbsp water into a small saucepan and warm over a low heat, stirring often, until the sugar and salt just dissolve. Add the food colouring (of your preferred shade) and vanilla paste, then mix well. Pour over the popcorn and mix again.
Tip the popcorn onto the prepared tray and place in the oven for 10 minutes. Stir well, then return to the oven for 10 minutes more. Remove and leave to cool completely.
Scatter with the edible eyes and sweets, then serve in a large bowl or in cups or cones.
