Lentil cheeseburger bowls

Ingredients

  • 1 tbsp Essential Vegetable Oil
  • 1 red onion, finely chopped 
  • tsp paprika
  • 2 tbsp Bisto Beef Gravy Granules 
  • 2 x 400g cans Essential Lentils in Water, drained and rinsed 
  • ½ tsp ground black pepper
  • tsp garlic granules
  • tsp Cooks’ Ingredients Italian Seasoning
  • 200ml vegetable stock
  • 1 tbsp tomato ketchup
  • 75g Essential Mild Cheddar, grated

For the burger sauce

  • 4 tbsp mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tbsp American-style mustard
  • 4 pickled burger gherkins, drained and finely chopped

Method

  1. Heat a drizzle of oil in a large ovenproof nonstick frying pan. Add the onion and fry on a medium heat for 5-7 minutes until soft. Stir in the paprika for the final minute. Preheat the grill to medium.

  2. Mix the gravy granules with 200ml boiling water according to pack instructions, then add the gravy, lentils, black pepper, garlic granules, Italian seasoning, stock and ketchup to the pan. Bring to the boil, then simmer over a medium heat for 5-7 minutes until the sauce is thick.

  3. Meanwhile, make the burger sauce. Mix all the ingredients together, then season and put in a small bowl.

  4. Cover the lentils with the cheese and grill for about 3 minutes, until the cheese is melted and golden brown. Divide between 4 bowls and serve with the burger sauce. You can also add beer-battered onion rings (see tip), sliced pickles, shredded lettuce, sliced tomatoes and cucumber, if you like.

Cook’s tip

Beer-battered onion rings really finish this off. Cook them according to pack instructions to the end of step 2, then turn the oven to grill and melt the cheese on top of the lentils.
