Ingredients

  • 3 Assam tea bags
  • 40g ginger, peeled and coarsely grated
  • 8 cardamom pods
  • 1 tsp cloves
  • 5 cm cinnamon stick
  • ½ tsp black peppercorns
  • ¼ tsp ground nutmeg
  • 200ml whole milk
  • 2 tbsp caster sugar

Method

  1. Pour 750ml water into a saucepan, add the tea bags, ginger and spices. Bring the brew to a boil and cook, uncovered, for 10-12 minutes until reduced by half. Add the whole milk and sweeten with as much sugar as you dare, about 2 tablespoons.

  2. Reheat the whole kaboodle, strain into mugs and serve

You can choose your own spices depending on what you like. If you have one, a brown cardamom pod is a great addition.
