Moroccan-style haddock in spicy tomato sauce

This flaky haddock is served on a bed of couscous and topped with a moroccan style sauce, chopped parsely and a dollop of yogurt.

Ingredients

  • 1 tbsp olive oil
  • 3 garlic cloves, crushed
  • ¼ tsp hot smoked paprika
  • 1 tsp ground cumin
  • 4 Waitrose 1 Red Choice Tomatoes (about 200g), roughly chopped (approx. 3-4)
  • 1 tsp honey
  • 1 tsp lemon juice
  • 240g boneless haddock fillets
  • 300g cauliflower and kale couscous
  • 2 tbsp natural yogurt
  • Chopped parsley, to serve

Method

  1. Heat the oil in a saucepan over a medium heat. Add the garlic and spices, and fry gently for 2-3 minutes until fragrant. Add the tomatoes, honey and lemon juice. Season and simmer for 5 minutes until the tomatoes have broken down.

  2. Add the fish to the pan, turn the heat to low, cover with a lid and simmer gently for 5 minutes until the fish is cooked through and opaque. Take off the heat and leave to sit for 2 minutes.

  3. Heat the couscous in the microwave according to the pack instructions and serve with the fish and tomato sauce with a spoonful of natural yogurt and some chopped parsley to garnish.
