Mulled wine syrup
All your lucky recipient need do is add this to 750ml red wine, cider or apple juice as it heats up.

- 2 oranges (scrubbed), pared zest and juice
- 500g light brown soft sugar
- 2 cinammon sticks
- 5 star anise
- 9 cardamom pods, lightly bashed
- 1 tsp caraway seeds, lightly bashed
- 20g ginger, peeled and sliced
Put all the ingredients in a large pan with 650ml water. Bring slowly to the boil, stirring until the sugar dissolves. Simmer for 15-20 minutes, then cool.
Cover to infuse overnight, then strain through a fine sieve into the pan, bring to the boil again and pour while still hot into hot sterilised bottles. Chill for up to 2 weeks. Add 200ml syrup to 750ml red wine, cider or apple juice; heat through gently to serve.
