Ingredients

  • 300g pouch Chickpeas, Spinach & Quinoa
  • 2 tbsp Essential Olive Oil
  • 1 tbsp balsamic vinegar
  • 2 handful wild rocket (about 30g)
  • 150g ball Essential Italian Mozzarella, drained and torn
  • 2 Waitrose Yellow Flesh Peaches, sliced
  • 20g pecans, roughly chopped

Method

  1. Heat the grain pouch according to pack instructions. Meanwhile, whisk together the oil and balsamic vinegar with a pinch of salt.

  2. Divide the grains between plates. Top with the rocket, mozzarella, peaches and pecans. Spoon over the dressing and serve immediately.

You can use any cooked grain (or a combination of grains) in this salad. Bulgur wheat or freekeh make delicious swaps.
