Ingredients

300g pouch Chickpeas, Spinach & Quinoa
2 tbsp Essential Olive Oil
1 tbsp balsamic vinegar
2 handful wild rocket (about 30g)
150g ball Essential Italian Mozzarella, drained and torn
2 Waitrose Yellow Flesh Peaches, sliced
20g pecans, roughly chopped

Method

Heat the grain pouch according to pack instructions. Meanwhile, whisk together the oil and balsamic vinegar with a pinch of salt.
Divide the grains between plates. Top with the rocket, mozzarella, peaches and pecans. Spoon over the dressing and serve immediately.
