Penne with bacon, spring greens, tomato & chilli sauce

- 300g Essential Penne
- 500g pack Essential Spring Greens
- 1 tbsp olive oil
- 6 rashers Essential Unsmoked Streaky Bacon, roughly chopped
- 340g jar Essential Tomato & Chilli Pasta Sauce
- Essential Grated Parmigiano Reggiano DOP to serve
Bring a large pan of water to the boil, then cook the pasta according to pack instructions. Meanwhile, strip the leaves from the greens and discard the stalks. Roll up the leaves and slice into thick ribbons.
Stir the greens into the pan of boiling pasta halfway through cooking. Heat the oil in a large frying pan over a medium heat, then add the bacon and fry for about 5 minutes, until starting to turn crisp. Add the pasta sauce and bring to a simmer.
Drain the pasta and greens thoroughly, toss with the hot sauce and serve with the cheese sprinkled over.
