Quick chicken & leek crumble

If you thought crumble was reserved for apples and rhubarbs, you were wrong! This winter warmer is delightful in the colder months.

    Ingredients

    • 3 tbsp garlic-infused olive oil
    • 330g essential Waitrose British Chicken Breast Chunks
    • 2 leeks, sliced
    • 250g essential Waitrose Reduced Fat Soft Cheese
    • 50g oats
    • 50g Waitrose Love Life Mixed Roasted Nuts, chopped
    • 25g Parmigiano Reggiano, grated

    Method

    1. Preheat the oven to 200 degrees C, gas mark 6.

    2. Heat 1 tbsp oil in a large frying pan and fry the chicken for 2 minutes, add the leeks and fry for 3 minutes. Stir in the soft cheese, cook for 1 minute then season. Transfer to an ovenproof serving dish.

    3. Mix the remaining ingredients and sprinkle on the chicken. Bake for 20 minutes until the chicken is cooked through with no pink meat. Serve with green beans.
