Roast spiced runner beans, egg & houmous platter
These runner beans, spiced with the herby and aromatic zaatar and accompanied by boiled eggs , make for a healthy, tasty side dish.

Ingredients
2 tsp olive oil
280g pack essential Waitrose Runner Beans, trimmed and strings removed
2 Waitrose British Blacktail medium Free Range Eggs, at room temperature
2 tsp Cooks' Ingredients Herby Zaatar
100g reduced fat houmous
1 pinch smoked paprika
1 tsp extra virgin olive oil, to serve
2 pittas, toasted and cut into strips
Method
Preheat the oven to 220°C, gas mark 7. Put the oil into a large roasting tin, add the beans and some seasoning, and toss well. Roast for 10 minutes, turning once, until slightly darker green, a little wrinkled and just tender.
Meanwhile, bring a small pan of water to the boil. Gently lower in the eggs. Boil for 7 minutes, then cool under cold water for 5 minutes. Peel the eggs and cut in half.
Toss the zaatar with the beans and set aside. Spoon the houmous over a plate, top with the beans and eggs, and scatter the eggs with a little smoked paprika and seasoning. Drizzle the extra virgin oil over and around. Serve with the toasted pittas.
