Spiced leek broth
Leeks are the star of the show in this simple, cosy broth. Season generously with salt, pepper and lemon to bring out those bright Med flavours. The only thing missing is a dunker, and our cheesy raclette toastie is just the thing. Dip into more of our delicious soup recipes.

Ingredients
- 6 tbsp extra virgin olive oil, plus extra to serve
- 800g trimmed leeks, sliced into rings
- 500g carrots, peeled and finely sliced into half-moons
- 1 tbsp cumin seeds
- 4 clove/s garlic crushed
- 2 tbsp tomato purée
- 1.6 L gluten free vegetable stock
- 1 cinnamon stick
- 25g pack coriander, stalks and leaves separated, leaves finely chopped
- 1 lemon, juice, to taste
- 6 tbsp No.1 Strained Natural Greek Yogurt
- 80g walnuts, toasted and finely chopped
- Turkish red pepper flakes, to serve
Method
In a large pan, heat the oil over a medium-high heat, then fry the leeks, carrots and cumin seeds with a pinch of salt for 10 minutes, stirring often, until softened and lightly caramelised. Add the garlic and fry for 2 minutes, then add the tomato purée and fry for another 2 minutes.
Add the stock and cinnamon stick, then tie the coriander stalks into a bundle with cooking string and add them too. Bring to a simmer and cook gently for 10-12 minutes, until the veg are tender.
Season the broth, adding the lemon juice to taste – it should be gently acidic. Remove the cinnamon stick and coriander stalks, then divide the broth among bowls and top each with a dollop of yogurt, a scattering of toasted walnuts and coriander leaves, some red pepper flakes and a drizzle of oil.
