Ingredients

  • 500g pack free range pork belly slices
  • 1½ tbsp Cooks’ Ingredients Deep South Cajun rub
  • 1 tsp fine sea salt
  • 4 tbsp No.1 Canadian Dark Maple Syrup
  • 390g jar Bold Bean Co Smoky Chilli Baked Beans
  • 420g can Essential Black Beans In Water, drained
  • 3 tbsp Cooks' Ingredients Lemon & Pepper Crust
  • 30g Parmigiano Reggiano, finely grated
  • 200g deli style coleslaw
  • 1 Cooks’ Ingredients Jalapeño Chilli, thinly sliced

Method

  1. Preheat the oven to 190ºC/170ºC fan/ gas 5. Put the pork slices into a medium mixing bowl. Add the Cajun rub, salt and maple syrup, then mix well to coat thoroughly. Line a baking tray with foil or parchment, put a rack on the tray and lay the pork on top. Bake for 35-40 minutes, flipping halfway, until browned and a little singed on the edges, with no pink meat and juices that run clear.

  2. Meanwhile, put the baked and black beans into an ovenproof dish, cover with foil and add to the oven at the halfway point of the pork cooking time. Cook for 10 minutes, then remove the foil, top the beans with the lemon and pepper crust and cheese, and return to the oven for 10 minutes more.

  3. Remove the pork from the oven, allow to rest for 5 minutes, then serve with the beans, coleslaw and a scattering of chilli.
