Steak with strawberry & cucumber salsa

Ingredients

For the steak

  • 2 tsp olive oil
  • 2 x 150g beef sirloin steaks
  • Boiled new potatoes or chunky chips, to serve

For the salsa

  • 150g strawberries, hulled and diced
  • ¼ cucumber, deseeded and diced
  • ½ green chilli, deseeded and finely chopped
  • ¼ unwaxed lemon, zest and juice
  • ¼ small shallot, finely chopped
  • ¼ x 25g pack mint, leaves chopped
  • ¼ x 20g pack dill, chopped
  • ¾ tsp Cooks’ Ingredients Pul Biber
  • ½ tbsp olive oil

Method

  1. In a bowl, combine all the salsa ingredients, then season generously and set aside.

  2. Heat a large frying pan until very hot. Rub the oil over the steaks, then season. Fry for 1-2 minutes per side, for rare to medium, until browned all over, then, using tongs, cook the steaks on the fatty edge for 1 minute until golden.

  3. Move to a plate, cover loosely and rest for 5 minutes. Serve the steaks with the salsa and new potatoes or chunky chips.

Cook’s tip

This salsa would also partner beautifully with seared lamb, or grilled halloumi for a vegetarian option.
