Ingredients
For the steak
2 tsp olive oil
2 x 150g Aberdeen Angus beef sirloin steaks
Boiled new potatoes or chunky chips, to serve
For the salsa
150g strawberries, hulled and diced
¼ cucumber, deseeded and diced
½ green chilli, deseeded and finely chopped
¼ unwaxed lemon, zest and juice
¼ small shallot, finely chopped
1/4 x 25g pack mint, leaves chopped
1/4 x 20g pack dill, chopped
¾ tsp Cooks’ Ingredients Pul Biber
½ tbsp olive oil
Method
In a bowl, combine all the
salsa ingredients, then season
generously and set aside.
Heat a large frying pan until very
hot. Rub the oil over the steaks,
then season. Fry for 1-2 minutes
per side, for rare to medium, until
browned all over, then, using tongs,
cook the steaks on the fatty edge
for 1 minute until golden.
Move to a plate, cover loosely
and rest for 5 minutes. Serve the
steaks with the salsa and new
potatoes or chunky chips.
Cook’s tip
This salsa would also partner beautifully with seared lamb, or grilled halloumi for a vegetarian option.
