Ingredients

  • 590g pack slower reared chicken thigh fillets
  • 4 star anise
  • 4 tsp light brown soft sugar
  • 2 tbsp dark soy sauce
  • 2 tbsp wok oil
  • 50g cashew nuts
  • 2 red chillies, chopped
  • 2 clove/s garlic, chopped
  • 2 Midi Cucumbers, halved lengthways, then cut into chunks
  • 1 bunch/es salad onions, 4 cut into 2.5cm lengths
  • 1 tbsp rice vinegar
  • Coriander leaves, to serve (optional)

Method

  1. Cut the chicken thighs into bitesized pieces and add to a bowl. Toss with the star anise, 3 tsp sugar and 1 tbsp soy sauce. Cover and chill for 30 minutes, if you have time.

  2. Heat 1 tbsp wok oil in a large frying pan or wok. Cook the cashews for 1-2 minutes until lightly golden, then lift onto a plate with a slotted spoon. Add the chicken (with the star anise), and stir fry over a high heat for 10 minutes, or until golden and catching in places, cooked through and with no pink meat. Set the chicken aside on a plate.

  3. Add the remaining wok oil to the pan, then add the chillies and garlic and stir for a few seconds, until aromatic. Tip in the cucumbers and salad onion pieces, then stir fry for 1 minute until softening slightly.

  4. Combine the remaining soy and sugar with the vinegar, then pour over the cucumber, stirring until coated in a thick, glossy sauce. Add the chicken back with the cashews and mix well. Remove the star anise and serve, topped with the reserved salad onions, finely shredded, and the coriander, if using. Good with fluffy rice, if you like.
