  • 400g strawberries, hulled and chopped
  • 100g caster sugar
  • 750ml bottle rosé wine
  • 200ml Aperol


  1. Mix the strawberries and sugar together, then whizz in a liquidiser or using a hand blender until completely smooth. Strain through a fine sieve into a large, freezerproof container.

  2. Stir in the wine and Aperol, then cover and freeze overnight until solid.

  3. Break the mixture up with a serving spoon and liquidise in 2-3 batches to create a thick, smooth mixture with evenly sized crystals. If it’s too solid, leave out of the fridge for 10-15 minutes first, then pour into 10 glasses and serve.

Cook’s tip

The frozen mixture will keep in the freezer for up to 1 month, for cocktails on demand.
