An easy shortcut recipe for a quick and simple dinner requiring only five ingredients, including crunchy sweet chilli peanuts.

Fry the pork in a wok over a high heat, stirring often, until golden, caramelising and crisp in places, about 10-12 minutes.
Roughly chop the peanuts and stir fry for a moment until the sweet chilli mingles with the pork. Scrub, then zest the lime.
Finely slice the onion, then fold ½ into the pork with the zest. Season.
Pull the leaves from the lettuces and set on a board or plate. Fill with the mince, top with more onion and squeeze in some lime juice. Add a splash of soy, if liked.
