Toasted feta, strawberry & basil salad
Roasting feta briefly in the oven until golden adds a lovely depth of flavour. It goes brilliantly with juicy strawberries and a balsamic dressing.

- 200g No.1 British Speciality Strawberries, at room temperature
- 1 tbsp sesame seeds
- 2 tbsp pine nuts
- 1 tbsp white balsamic vinegar
- 2 tbsp extra virgin olive oil
- 80g washed spinach
Hull and cut the strawberries into wedges. Preheat the oven to 200°C, gas mark 6. Crumble the feta over a large baking sheet lined with baking parchment. Place into the oven for 10 minutes until golden, then turn the pieces over. Scatter with the sesame seeds and pine nuts, and continue cooking for another 3-5 minutes, stirring once, until everything is dark golden.
In a large salad bowl, whisk the balsamic, oil and some seasoning together. Add the strawberries, spinach and whole basil leaves, and turn gently in the dressing before scattering over the feta, seeds and nuts, and turning briefly again before serving. Delicious with crusty white bread.
