Ingredients

  • 2 x 150g packs cooked extra large king prawns, chopped if liked
  • 65g pack prawn crackers

For the umami mayo

  • 150g full fat mayonnaise
  • 4 tsp sriracha, or to taste
  • 2 unwaxed limes, zest and juice
  • 4 tsp Clearspring Organic Furikake, plus more to serve (or see tip)
  • 4 tsp light soy sauce
  • 25g pack coriander, leaves chopped
  • 20g pack chives, finely chopped, plus extra to serve

Method

  1. Mix all the umami mayo ingredients together in a serving bowl until well combined. Add the prawns, then mix through to fully incorporate. Taste and adjust the seasoning accordingly (if you want more heat add more sriracha, or more umami, add more furikake).

  2. Serve sprinkled with extra furikake and chives, with the prawn crackers for scooping.

Cook’s tip

If you can’t find furikake, a mix of toasted white and black sesame seeds and a dash more soy will work too.
