Wassail punch

An update on a Wassail Bowl, a hot spiced apple drink traditionally served on Twelfth Night. We have taken the alcohol out but you could always put it back in.

Ingredients

  • 150g demerara sugar
  • L pressed apple juice
  • 75ml apple cider vinegar
  • 4 cardamom pods
  • ½ tsp cloves
  • ½ tsp All Spice
  • 500ml freshly brewed camomile tea
  • 2 apples, cored and cut into even slices
  • Grating fresh nutmeg

Method

  1. Put the sugar in a medium saucepan, add 750ml warm water and stir to dissolve the sugar. Add the remaining ingredients apart from the nutmeg with a pinch of salt and warm very gently for about 20 minutes, until the mixture is fragrant and steaming. Divide between 8-10 heatproof glasses and grate a little fresh nutmeg on top of each drink.

COOK’S TIP

Add a tot of apple brandy or whisky to the wassail punch if you like.
