Yogurt with eggs, greens & chilli oil

Ingredients

  • 100g frozen edamame
  • 235g pack baby spinach
  • 1 tsp toasted sesame oil
  • 4 medium free range eggs
  • 1 tsp sesame seeds
  • 240g Kri Kri My Authentic Greek Yogurt 0% Fat
  • 2 tsp Itsu Crispy Chilli Oil
  • Flatbreads, warmed, to serve (optional)

Method

  1. Bring a large pan of salted water to the boil. Add the edamame, simmer for 8 minutes, then stir in the spinach and simmer for 1 minute, until wilted and the beans are tender. Drain, press out excess moisture with a wooden spoon, then move to a bowl. Season. Dress with the sesame oil.

  2. Meanwhile, bring a medium pan of water to the boil. Poach the eggs for 3 minutes or boil for 6 minutes 30 seconds, for soft yolks and a set white. Heat a dry pan and toast the sesame seeds for 2 minutes, stirring often, until golden.

  3. Spread the yogurt over 2 wide bowls, then add the greens. Top with the eggs (halved if boiled), scatter over the sesame seeds and drizzle with chilli oil. Serve with flatbreads, if you like.

Cook’s tip

Choose the cooking method for your eggs depending on how fresh they are. Fresh eggs make the best poached, while slightly older eggs will be easier to peel if boiled.
