MEAL MATHS – WATERMELON SALAD
Ready in 10 minutes | Serves 4
SCROLL DOWN TO ADD INGREDIENTS
1. Remove the skin from the watermelon then cut the flesh into 2cm cubes. Slice the cucumbers into similar-sized chunks and add to a large bowl, along with the watermelon. Add the mint leaves, tearing any larges ones in half, then crumble in the feta.
2. Make a dressing for the salad by combing 4 tbsp cucumber pickling liquor with 6 tbsp olive oil and a pinch of salt, whisking well to combine. Add the dressing to the salad and toss well to combine, then divide between 4 plates and serve immediately. Delicious with crusty bread for something more substantial.
