Fruity prawn & pineapple tacos

Serves: 4
2 x 150g packs raw king prawns
1 pack Wahaca Sweet Red Pepper & Garlic Taco Kit
3 tsp oil
1 red pepper, deseeded and sliced
275g pack fresh diced pineapple, cut into smaller pieces
½ x 28g Cooks’ Ingredients Coriander, roughly chopped
1 ripe avocado, sliced
Soured cream, to serve
1. Mix the prawns with the seasoning mix from the taco kit and 1 tsp oil.
2. Heat the remaining oil in a large frying pan and fry the pepper for 3 minutes. Add the prawn mix and cook for 1 minute. Stir in the salsa from the kit, a splash of water and the pineapple, and cook for 2 minutes. Stir in the coriander.
3. Warm the tacos according to the pack instructions. Fill with the prawn mixture, sliced avocado and soured cream.
