    Winter Fruit Salad

    Here is a simple yet glamorous-looking pudding to reawaken your taste buds.

    Serves: 8

    Ingredients

    • 1 large pineapple (about 800g when prepared)
    • 3 Large navel oranges
    • 1 pomegranate
    • 5 mandarins, juiced
    • 5 drops sweet orange or lemon oil
    • 250g Medjool dates, pitted and halved
    • 6 fresh apricots, pitted and halved
    • 2 tsp orange flower water

    Method

    1. Remove the peel from the pineapple, slice the flesh into circles, and cut out the core. Slice the ends off the oranges with a sharp knife then cut downwards, following the curve of the fruit, removing all the peel and pith in strips. Slice the flesh out of the segments so you have just orange. Place both fruits in a shallow bowl.
    2. Cut open the pomegranate and set aside half the seeds to add to the fruit salad at the end. Squeeze the rest into the mandarin juice to add colour and flavour. Add the sweet orange or lemon oil to the juice and set aside.
    3. Add the dates and apricots to the bowl and sprinkle with the mandarin and pomegranate juice, mixed with the orange flower water, and the remaining pomegranate seeds.
