Apple & walnut blondies

Makes: 12
100g unsalted butter, melted and cooled, plus extra for greasing
200g golden caster sugar
1 large egg
175g plain flour
1 tsp ground cinnamon
½ tsp baking powder
½ tsp bicarbonate of soda
100g walnuts, toasted and roughly chopped
1 apple, peeled and diced
½ tsp salt
1 Preheat the oven to 180˚C, gas mark 4. Grease a 20cm x 20cm square baking tin and line with baking parchment. Using electric beaters, cream the butter, sugar and egg together for 2-3 minutes, until pale and thick. Stir in the remaining ingredients.
2 Spoon the mixture into the tin, levelling the surface. Bake for 45 minutes until crusty, golden and just set. Leave to cool in the tin, then cut into 12 pieces, or serve while still warm, with a scoop of vanilla ice cream, if liked.
