As deep as a duvet and as light as a feather, our classic Victoria sponge makes a classy centrepiece for any occasion
250g unsalted butter, softened and cut into cubes
275g golden caster sugar
4 Clarence Court Burford Browns Eggs
250g self-raising flour
300g fresh raspberries, washed
150ml whipping cream
Icing or caster sugar, for dusting
To freeze the unfilled cakes, interleave them with a sheet of baking parchment and wrap in foil or put in a rigid container. Use within a month. Allow 2-3 hours to defrost and eat on the day of defrosting.
