Salmon and cream cheese crumpets
This classic breakfast flavour combination is given a little twist with a sprinkle of pickled red onions and salty capers.
Simply toast four sourdough crumpets then spread 1½ tbsp soft cheese onto each. Divide 100g smoked salmon between the crumpets, along with some pickled red onions and a few nonpareille capers. Season and serve at once with lemon slices on the side.
Ricotta and blueberry bagels
Sweet, syrupy blueberries spooned onto creamy ricotta make for a dreamy bagel topping at breakfast.
Start by zesting 1 unwaxed lemon, then squeeze the juice of the lemon into a pan along with 200g frozen blueberries and 1 tbsp caster sugar. Cook for about 5 minutes, until it becomes syrupy. Split open 2 bagels and toast them, then whisk half of the lemon zest into 250g of Galbani ricotta. Spread this mixture onto the bagel halves, top with the blueberries and scatter over the remaining zest.
