INGREDIENTS: duck (85%), pork (6%), plum glaze (5%) (concentrated plum juice, water, sugar, cornflour, gelling agent (pectin)), plum (1.0%), diced ginger (ginger, cane sugar), ginger purée, rice flour, maize flour, honey, tapioca starch, salt, parsley, acidity regulator (sodium phosphates), star anise, coarse black pepper, maize starch, preservative (sodium metabisulphite), dextrose monohydrate.

Preheat 200°C, 180°C Fan. Cook for 1 hour and 45 minutes, baste during cooking. Decant glaze for last 15 minutes of cooking, drain excess fat first (leaving roasting juices behind). Rest for 30 minutes before carving. During resting, drain the duck of cooking juices, skim off excess fat and uses the juices as a base for a gravy. Cool leftovers to room temperature, refrigerate within 2 hours, consume within 2 days. (Time 2 hours, Oven: 200, Fan: 180, Gas: Gas Mark 6)
