Avocado & Cajun chicken Caesar

Ingredients
- 270g pack Easy to Cook Cajun Chicken breasts
- 1 lime, halved
- 1 head sweet cos lettuce, chopped
- 1 Waitrose Perfectly Ripe Avocado, sliced
- 50g ciabatta croutons
Dressing
- 2 tbsp mayonnaise
- 2 tbsp Greek style natural yogurt
- 15g finely grated Parmigiano Reggiano, plus extra to serve
- 3 anchovies
- ½ clove/s garlic, chopped
Method
Heat a griddle pan over a medium-high heat. Cook the chicken for 12 minutes, flipping the breasts every 3 minutes to get a grid of char marks. Add the lime halves, cut-side down, for the last minute of cooking. Check the chicken is thoroughly cooked, the juices run clear and no pink meat remains, then set aside to rest for 3-4 minutes.
Meanwhile, in a small blender, whizz all the dressing ingredients with a good grind of black pepper. Arrange the lettuce, avocado and croutons on plates and spoon over some of the dressing. Slice the chicken and arrange on top, then drizzle over the remaining dressing. Serve with any juices from the chicken spooned over and the lime halves on the side for squeezing. Scatter with extra cheese on top, if liked.
