  • 500g small, waxy new potatoes (such as charlotte), halved if large
  • 3 tbsp extra virgin olive oil
  • 1 sprig rosemary, finely chopped
  • 6 smoked streaky bacon rashers
  • 2 shallots, finely chopped
  • 1 garlic clove, crushed
  • 4 tbsp red wine vinegar
  • tsp wholegrain mustard
  • 2 avocados, sliced
  • 300g cherry tomatoes, halved
  • 1 romaine lettuce heart, trimmed and roughly shredded
