Changezi chicken

This buttery chicken curry with origins in northern India is rich and creamy yet mildly spiced. It’s best devoured with a heap of fluffy rice and fresh roti.

Ingredients

  • 4 slower reared chicken thigh fillets
  • 190g jar Gymkhana Classic Tandoori Marinade
  • 1 tbsp ghee
  • 2 onions, finely sliced
  • 300ml Gymkhana Rogan Josh Cooking Sauce 
  • 300ml Gymkhana Butter Masala Cooking Sauce 
  • 1 handful/s coriander leaves, to serve
  • Steamed basmati rice, roti or naan, to serve

Method

  1. Preheat the oven to 200ºC, gas mark 6. Coat the chicken in the marinade, cover and set aside for 30 minutes. Roast the chicken in a small roasting tin for 16-18 minutes.

  2. Meanwhile, heat the ghee in a large frying pan, then cook the onions for 15 minutes until golden brown.  Add the rogan josh sauce and simmer for 5 minutes.

  3. Pour in the butter masala sauce, add the cooked chicken and mix well to combine. Cover and simmer for 5 minutes, or until cooked through, the juices run clear and no pink meat remains.  Scatter with coriander, then serve with basmati rice, roti or naan, if liked.

Cook’s tip

Stretch this further by adding a jar of drained, rinsed chickpeas to the sauce to gently simmer alongside the chicken.
