Preheat the oven to 200ºC, gas mark 6. Coat the chicken in the marinade, cover and set aside for 30 minutes. Roast the chicken in a small roasting tin for 16-18 minutes.
Meanwhile, heat the ghee in a large frying pan, then cook the onions for 15 minutes until golden brown. Add the rogan josh sauce and simmer for 5 minutes.
Pour in the butter masala sauce, add the cooked chicken and mix well to combine. Cover and simmer for 5 minutes, or until cooked through, the juices run clear and no pink meat remains. Scatter with coriander, then serve with basmati rice, roti or naan, if liked.
Stretch this further by adding a jar of drained, rinsed chickpeas to the sauce to gently simmer alongside the chicken.
