    • 30g Cooks’ Ingredients Porcini Mushrooms
    • 2 tbsp olive oil
    • 350g essential Waitrose British Chicken Breast Mini Fillets, halved
    • 2 echalion shallots, very finely chopped
    • 2 28g Knorr Chicken Stock Pots
    • 1 garlic clove, crushed
    • 2 sprigs thyme, leaves picked
    • 250g risotto rice
    • 150ml dry white wine
    • 1 Small knob of butter
    • 50g Grana Padano or Parmigiano Reggiano, grated, plus extra to serve
