Ingredients

For the strawberry syrup

  • 200g sugar
  • 200ml water
  • 400g strawberries, diced and hulled
  • 3 strawberries
  • 50ml Amarula Cream Liqueur
  • 25ml vodka
  • 25ml double cream
  • Ice cubes

Method

  1. To make the strawberry syrup, heat the sugar and water until the sugar dissolves. Add the strawberries, and simmer for 10-15 mins. Remove from the heat, allow to cool and strain to remove the fruit.

  2. Muddle 2 strawberries in a shaker. Add the Amarula, vodka, 25ml strawberry syrup, double cream and ice. Shake. Double-strain into a chilled martini glass. Garnish with the remaining strawberry.

Cook’s tip

Store the strawberry syrup in a sterilised container. It will keep for up to 4 weeks in the fridge.
