Ingredients

  • 3 x 100g tubs Seafood & Eat It White Crab
  • 5 tbsp mayonnaise
  • 1 unwaxed lemon, zest of all, juice of ½
  • ¼ tsp ground white pepper
  • 2 salad onions, finely sliced
  • 90g pack Samphire
  • 1 tsp olive oil
  • 24 Rahms Mini Croustades
  • Chilli flakes, to serve

Method

  1. In a bowl, mix the crab, mayo, lemon zest, 1 tbsp lemon juice and the pepper. Stir through the salad onions, then cover and chill until needed (up to 24 hours).

  2. Bring a pan of water to the boil, add the samphire and cook for 30 seconds. Drain, then plunge into iced water to cool. Pat dry with kitchen paper, then slice into 1cm pieces and toss with the oil and a pinch of salt. Cover and chill until needed.

  3. When ready to serve, arrange the empty mini croustades on a plate and set out with the crab mix, samphire and chilli flakes in bowls so guests can fill their own.
