Greek yogurt chocolate whip with maple-candied pecans

Ingredients

  • 120g dark chocolate, 70% cocoa, finely chopped
  • 350g Kri Kri My Authentic Greek Yogurt 0% Fat
  • 3 tbsp maple syrup, plus extra to serve
  • 1 tbsp cocoa powder
  • 30g pecan nuts
  • 1 tsp olive oil, plus extra to serve
  • Mixed berries, to serve

Method

  1. Melt the chocolate in a microwaveable bowl in 30-second bursts or over a pan of barely simmering water. Stir occasionally until smooth, then allow to cool slightly.

  2. Put the yogurt and 2 tbsp maple syrup into a food processor, sift in the cocoa, then pour in the chocolate. Whizz for 30 seconds, scraping the edges of the bowl halfway, until combined. Don’t overmix or the yogurt will turn runny. Scoop into 4 serving dishes, cups or ramekins (about 150ml each) and spread evenly. Chill for at least 2 hours, or ideally overnight. It will need longer in the fridge to firm up if you overwhip it.

  3. For the candied pecans, preheat the oven to 200°C, gas mark 6 or heat the air fryer to 180°C. Mix the remaining maple syrup and the oil in a small bowl, then toss through the pecans to coat. Spread them over a baking tray lined with baking parchment and roast for 7-8 minutes, or air fry in a lined tin for 5-6 minutes, until sticky and toasted. Leave to cool on the paper.

  4. Top the mousses with the candied pecans and berries, and a drizzle of maple syrup or extra virgin olive oil, if you like.
