Green tikka paneer & potato traybake

This recipe from Waitrose Food content producer Imogen Hope is a play on Indian potato and paneer curries. It's super speedy to prepare, thanks to the fragrant green tikka marinade – and it's cooked on one baking tray to save on washing up. That's a win-win in our book. Ingredients

  • 350g British Regal white potatoes, cut into 3cm chunks
  • 4 tbsp Gymkhana Green Tikka Marinade
  • 1 tbsp sunflower oil
  • 200g pack paneer, cut into 2cm cubes
  • 120g pack baby spinach
  • 100g No.1 Strained Natural Greek Yogurt
  • ¼ cucumber, grated
  • ¼ x 20g pack mint, leaves roughly chopped
  • ¼ x 20g pack coriander, leaves roughly chopped
  • ½ lime, cut into wedges

Method

  1. Preheat the oven to 200°C/ 180ºC fan/gas 6. In a large bowl, toss the potatoes with3 tbspmarinade, the oil anda pinch of salt. Put in a roasting tin and roast for 30 minutes. Meanwhile, toss the paneer in a bowl with the remaining marinade. Add the paneer tothe tin and roast for another 10 minutes until the potatoes are crisp and the paneer is turning golden. Remove and add the spinach, returning to the oven for 2 minutes until it has wilted.

  2. Meanwhile, in a small bowlmix the yogurt with the grated cucumber, most of the mint and most of the coriander.Season, thenchill until needed.

  3. Serve the roasted potatoes, paneer and spinach topped with the remaining mint and coriander, plus the yogurt and lime wedges. Some mango chutney is good too, if you like.
