Ingredients

  • 25g pack coriander
  • 2 limes, juice
  • 1 tbsp olive oil, plus extra for drizzling
  • 1 small clove garlic
  • 1 mild green chilli, deseeded
  • ½ tsp fine sea salt
  • 2 x 150g packs ready-to-eat King Prawns in Coriander & Chilli
  • ¼ red onion, finely sliced
  • 2 little gem lettuces, shredded
  • 10 radishes, sliced
  • 1 avocado, sliced

Method

  1. In a blender, whizz the coriander, lime juice, oil, garlic, chilli and salt until smooth. Put the prawns and red onion in a bowl and pour over the dressing. Set aside to marinate for 15 minutes.

  2. Arrange the lettuce, radishes and avocado on plates and drizzle with a little oil. Spoon over the prawns and dressing and serve with tortilla chips on the side, if liked.
