Ingredients

  • 1 dragon fruit
  • 1 small red onion, finely chopped
  • ¼ x 25g pack coriander, leaves finely chopped
  • 2 tbsp tamarind paste
  • ½ small red cabbage, core removed, rest finely shredded
  • 1 unwaxed lime, zest and juice
  • 260g packs Veetee Steam Filtered Sticky Rice
  • 350g frozen edamame beans
  • 2 x 130g Waitrose Garlic & Chilli King Prawns
  • 100g crispy fried onions, to serve

Method

  1. Peel the skin from the dragon fruit, then finely chop the flesh and tip into a bowl. Add the red onion, most of the coriander and the tamarind. Season with salt and set aside. In a separate bowl, toss the cabbage with the lime zest and juice, plus a pinch of salt, then set aside.

  2. Cook the rice and edamame according to pack instructions, then divide between bowls along with the cabbage, prawns and dragon fruit salsa. Serve scattered with the crispy fried onions.

Cook’s tip

This is also good with miso & sesame dressing, crispy seaweed thins and/or sriracha mayo.
