Peel the skin from the dragon fruit, then finely chop the flesh and tip into a bowl. Add the red onion, most of the coriander and the tamarind. Season with salt and set aside. In a separate bowl, toss the cabbage with the lime zest and juice, plus a pinch of salt, then set aside.
Cook the rice and edamame according to pack instructions, then divide between bowls along with the cabbage, prawns and dragon fruit salsa. Serve scattered with the crispy fried onions.
This is also good with miso & sesame dressing, crispy seaweed thins and/or sriracha mayo.
